Vegetarian BBQ Sandwich

I made these in class for our test over sandwiches awhile ago, and they. were. a-mazing! Pretty much the best sandwiches ever made. ever. There are a meatless take on a bbq sandwich, that uses eggplant and squash instead of any animal products. They are fantastic!

Kit Kadoodle:
2 eggplants
3 to 4 zuchnni
1 medium tomato
1cup of BBQ sauce (your favorite)
1/2 cup of Ketchup
1/4 cup of Balsamic Vinegar
1 tsp salt and pepper to taste

Take the eggplant and zuchinni and run in threw a grater, the final product will look like a mess but resembile that of pulled pork or any other meat that would be used for an 'average' sandwich.
Chop the tomato up into cubes and mix in with the eggplant and squash.
Cook the greated veggies in a large skillet until completely cooked, you'll want to transfer this to a collander to drain the natural juices out and return in to the original pan.
Combine your favorite bbq sauce with the ketchup and balsamic vinegar to make a sauce, add salt and pepper once the sauce is completely mixed with the veggies.
For the cheese I added a slice of provolone but you can add whatever your little cheesy heart desires!
